SQUASH CASSEROLE 
4 to 5 med. size squash
2 med. chopped onions
1 (6 oz.) box Stove Top stuffing (chicken)
1/2 c. butter
1 c. carrots, grated
1 (10 oz.) can cream of mushroom soup
1 c. sour cream
Salt and pepper to taste

Simmer squash and onion for 10 minutes; drain. Combine Stove Top seasoning packet with mushroom soup. Combine all, except butter and stuffing mix. Combine butter and 1/2 of stuffing mix to moisten stuffing. Combine all and place in dish; sprinkle remainder of stuffing on top of mixture. Bake at 350 degrees for 35 to 40 minutes. Can also add 2 cups of cooked chicken or turkey for a complete dish.
