HAM AND BROCCOLI (OR ASPARAGUS)
CASSEROLE
 
2 cans cream of chicken soup
1/2 c. chicken broth
2/3 c. milk
1 c. sharp Cheddar cheese, grated
1/2 c. grated Parmesan cheese
Juice of 1 lemon
2 tbsp. grated onion
1 tbsp. minced parsley
1 tbsp. prepared mustard
1 tsp. salt
1/2 tsp. pepper
1 c. mayonnaise
3/4 lb. thin spaghetti
3/4 lb. sliced ham, cut into strips (or 4 c. cooked cubed ham)
2 pkg. frozen chopped broccoli, cooked & drained well
Or 2 (15 oz.) cans asparagus

For Sauce: Heat soup, broth and milk, whisking until smooth. Add cheeses and lemon juice. Season with onion, parsley, mustard, salt and pepper. Remove from heat and add mayonnaise. Cook spaghetti and drain well.

Combine sauce, spaghetti and ham; mix well. Layer 1/2 spaghetti mixture; spread broccoli; then add rest of spaghetti mixture in 3 quart casserole. Bake at 350 degrees for 30 minutes, or until thoroughly heated. Serves 12.
