FLAMING KAHLUA FLAN 
2 tbsp. dark brown sugar
4 eggs
1/4 c. sugar
1/4 c. Kahlua or other coffee flavored liqueur
1/2 tsp. vanilla extract
2 c. skim milk

Sprinkle brown sugar in bottom of a 4 cup ring mold; set aside. Beat eggs at medium speed of an electric mixer until frothy. Add sugar, 2 tbsp. kahlua, and vanilla; beat just until blended. Add skim milk; beat well. Pour mixture into prepared mold. Place in a 9x13 baking dish. Pour 1 inch of hot water into baking dish. Bake at 300 degrees for 55 minutes or until a knife inserted near edge comes out clean. Remove mold from water; let cool on a wire rack 20 minutes. Loosen edges of flan with a knife. Invert onto a serving platter. Place remaining 2 tbsp. Kahlua in a small long handled saucepan; heat just until warm (do not boil) remove from heat. Ignite with a long match. Pour over flan. Serve when flames die down. Yield: 8 servings, 94 calories each.
