BUTTERMILK PIE 
1 c. plus 2 tbsp. sugar
2 eggs
1/4 stick butter
1 can or sm. bag coconut
1 unbaked pie shell

Cream sugar and butter and eggs, buttermilk, and coconut. Pour in unbaked pie shell. Bake at 350 degrees for 1 hour or until brown. (1 teaspoon vinegar to 1 cup milk, will make buttermilk.)
