BUTTERMILK PIE 
3 c. sugar
6 tbsp. flour
1 1/2 c. buttermilk
5 eggs
1 c. butter, melted
2 tsp. vanilla
1 sm. bag coconut
2 unbaked deep dish pie shells

Mix sugar, flour, half of buttermilk, and beaten eggs. Add the rest of buttermilk and fold in butter, vanilla and coconut. Cover sides of crust with foil. Pour mixture into pie shells. Bake 10 minutes at 425 degrees, then about 1 hour at 350 degrees. 7 servings.
