BUTTERMILK PIE 
5 tbsp. flour
2 c. buttermilk
2 eggs
3/4 c. sugar
4 tbsp. butter
1 tsp. lemon extract
1 pie shell, unbaked
Coconut (optional)

Mix flour with 1/2 cup buttermilk until smooth. Beat in eggs. Add sugar, butter, remaining buttermilk and lemon extract. Mix thoroughly. Pour into unbaked pie shell. Sprinkle coconut over top of pie. Bake in a moderate oven until it sets, so it is not runny.
