CREAMED CHICKEN OVER CONFETTI
RICE SQUARES
 
3 c. cooked rice
1 c. shredded Swiss cheese
1/2 c. chopped parsley
1/3 c. chopped onion
1/3 c. chopped pimento
1 tsp. salt
3 beaten eggs
1 1/2 c. milk
2 tbsp. butter
3 tbsp. flour
2 c. milk
1/2 tsp. marjoram
3 c. cubed cooked chicken
Paprika

Combine first 8 ingredients. Spoon into a greased 8 inch square pan. Bake at 325 degrees for an hour or until inserted knife comes out clean. Melt butter in a saucepan on low heat. Add flour and stir until smooth. Cook a minute stirring constantly. Add 2 cups milk, slowly while stirring. Continue stirring until thick and bubbling. Stir in 1/2 teaspoon more salt, marjoram, chicken and paprika. Cut rice dish into squares. Spoon creamed chicken over the squares.
