TURKEY SALAD 
4 c. cooked turkey, diced
3 tbsp. butter
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. pickle relish
1 c. cooked macaroni

Mix all ingredients. Chill and serve on lettuce leaves or tomato cups.

NOTE: 100 servings: 3 pounds cheese, 1 1/2 pounds olives, 3 quarts pickles, 3 pounds assorted nuts, 4 gallons fruit juice.

NOTE: 100 servings: 40 pounds chicken or turkey for pie, 35 pounds potatoes, 5 gallons scalloped, 20 quarts vegetable salad.
