“YELLOW CAKE” IS IN:

YELLOW CAKE 
3 cups sifted cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2/3 cup butter
1 3/4 cups sugar
2 eggs
1 1/2 teaspoons vanilla
1 1/4 cups milk

Preheat oven to 350°F.

Spray two 9x11x2-inch round pans with non-stick spray, then dust lightly with flour and tap out excess.

In a medium bowl, sift or whisk together cake flour, baking powder and salt. Set aside.

In the bowl of a mixer, beat butter until light in color, gradually adding sugar.

Beat in eggs, one at a time, beating after each egg is added. Add vanilla and beat until fluffy. To this mixture, gradually stir in 1/2 of the flour mixture, add half of the milk; beat for 30 seconds, then add the remaining flour, then the remaining milk.

Beat or stir for another 30 seconds or just until mixed. For a tender cake, do not over-mix the batter after the flour has been added.

Bake in preheated 350°F oven on middle rack for 30 to 35 minutes. Cool for 5 minutes and remove from pans. Cool.

Optional: Brush with melted butter and sprinkle with confectioners' sugar or frost as desired.
