PENNY'S SCONES 
2 cups whole wheat flour or all-purpose flour
1 tsp salt
1 tablespoon baking powder
2 tablespoons sugar
6 tablespoons butter
1/2 cup milk
1 egg

Preheat oven to 450°F.

In a large bowl, combine flour, salt, baking powder, and sugar.

Cut the butter into the flour. Using cold butter (freeze if the weather is warm), mix the butter into the flour using a large fork or pastry blender until mixture resembles coarse crumbs. Try not to melt the butter, so handle it only briefly.

In a second bowl, combine milk and egg. Gently incooperate the egg/milk mixture into the dry mixture. Knead in bowl until it all holds together. Spread out in an ungreased 7x7" baking dish. Pat to 1/2" thick.

With a buttered knife, cut mixture into 8 wedges. Bake for 15-20 minutes or until golden brown.

Serve with lemon curd or strawberry jam. Great for leftovers too.
