HEALTH MUFFINS 
1 c. bran
1 c. milk
1/2 c. oil
2 eggs, slightly beaten
2 tsp. vanilla
4 med. bananas
1/2 c. brown sugar
2 c. whole wheat flour
5 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. raisins
1/2 c. nuts (sunflower or walnut)
1/4 c. coconut (optional)

Soak bran and milk until absorbed. Add oil, eggs, vanilla, sugar and mashed bananas. Add dry ingredients, raisins, nuts and coconut if desired. Only stir enough to wet ingredients - do not over-stir. Use large muffin liners and fill almost to the top. Bake at 375 degrees for 20 minutes. Yield: 18 muffins. Moist, delicious and the kids will love them!
