GLUTEN FREE PEANUT BUTTER
COOKIES
 
1 cup peanut butter (crunchy or smooth is up to you!)
1 cup sugar
1 egg

Mix all the ingredients together and bake at 350°F for 10 to 12 minutes or until golden brown.

Variation: I sometimes add 1/2 cup chocolate chips. If you add them, it doesn't make it gluten free anymore!

For diabetics: Splenda is a great substitute for the sugar and they taste just as good.
