HEALTH MUFFINS 
1 c. fine ground whole wheat flour
1 c. soya flour
3 tsp. DA baking powder
1/2 tsp. salt
3 tbsp. sugar
2 eggs
1 scant c. milk or soy milk
3 tbsp. melted butter or oil

Beat eggs, milk and melted butter. Sift dry ingredients into mixing bowl. Make a "well" in dry ingredients and add liquid ingredients all at once. Stir quickly until flour is mixed in. Batter will be a little lumpy. Fill 12 grease muffin cups 2/3 full. Bake about 20 minutes at 425 degrees.
