2/3 c. orange juice 1 egg 2/3 c. honey 1/3 c. sunflower oil 1/3 c. yogurt 1 1/2 c. whole wheat flour 1 c. bran cereal 1 tsp. baking soda 2 tsp. cinnamon 1/4 c. sesame seeds 3/4 c. raisins 1 1/2 c. grated carrots Combine orange juice, egg, honey, oil and yogurt in a bowl and mix well. Add whole wheat flour, bran, baking soda, cinnamon, sesame seeds, raisins and carrots. and stir only until flour is dampened and ingredients lightly mixed. If possible let batter sit for half an hour to absorb flavors. Makes approximately 1 1/2 dozen muffins. Bake at 350 degrees for 30 to 35 minutes. For variety try adding grated apple or other fruits or nuts. |
