CORNED BEEF HASH 
1 large onion
5 pounds potatoes
2 cans corned beef
1/4 cup (1/2 stick) butter
splash milk

Chop the large onion then add chopped potatoes. Boil with lid on until spuds are cooked through and ready to mash. Mash potatoes, adding milk and butter until creamy. Chop corned beef into small cubes.

While potatoes are still hot, add the cubed corned beef and mix together well, leaving some chunky bits. Just don't over mix and make pink mash potatoes! Nice with crusty bread.

Feeds 6 hungry people on a cold winters night.
