CARROT PINEAPPLE MUFFINS 
1 c. sugar
2/3 c. oil
2 beaten eggs
1 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1 c. grated carrot
1 c. crushed drained pineapple
1 c. chopped walnuts; optional

In mixer bowl combine sugar, oil, and beaten egg. In another bowl combine flour, baking powder, soda, cinnamon, and salt. Mix well. Add dry ingredients to other mixture and stir to moisten. Fold in carrot pineapple and vanilla. Fill greased muffin tins to the top and bake at 375 degrees for 20 minutes.
