CARROT-PINEAPPLE MUFFINS 
1 1/2 c. all purpose flour
1 c. white sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 eggs
1 tsp. vanilla
1 tbsp. water
1/2 c. vegetable oil
1 c. grated carrots
1/2 c. crushed pineapple

Mix dry ingredients and mix wet ingredients. Add wet to dry until just moistened. Bake in 400 degree oven for 20 minutes.
