PANCAKES DE PAOLA 
2 c. white flour
1 tsp. salt
3 tbsp. sugar
2 tsp. baking powder
2 c. milk
3 eggs (lightly beaten)
1 tsp. vanilla
3 tbsp. melted butter

OPTIONAL:

Sliced bananas
Sliced apples
Berries
Nuts

Thoroughly blend first 4 ingredients. Add, while mixing by hand, milk, eggs and vanilla. Stir only until blended, batter still lumpy. Add melted butter and stir.

Cook on a heated griddle until bubbles form and pop in center of cakes, then flip over and cook until golden brown.

At this point add fruits or nuts prior to final flip.

Serve hot with butter and syrup or jelly. Makes about 1 dozen large cakes.
