CORN MOUNTAIN PANCAKES 
2 eggs
2 c. buttermilk
2 c. sifted enriched flour
1/4 c. corn meal
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/3 c. butter, melted

Beat eggs until fluffy and lemon-colored. Beat in buttermilk. Add sifted dry ingredients. Mix just until thoroughly dampened. Stir in melted butter Spoon on medium hot ungreased griddle. When puffed up and bubbles begin to bread, cook on other side. Makes 16 to 20 large pancakes.
