APPLE CINNAMON CORN MEAL
PANCAKES
 
1 cup all-purpose flour
1/4 cup corn meal
2 tbsp. brown sugar
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 cup chopped pecans
1 egg
1 cup milk
2 tbsp. melted butter
1 cup applesauce

OPTIONAL:

1 banana, mashed
1/2 cup fruit (e.g. blueberries or chopped strawberries)

Add together flour, corn meal, brown sugar, baking powder, salt, cinnamon and pecans. Mix together. Then add 1 beaten egg, 1 cup milk and butter. Mix well with whisk. Add applesauce and any fruit. Mix together again.

Prepare frying pan or griddle at medium to medium-high heat. When hot, pour about 1/2 cup (large spoon) for each pancake -- should be about 3-4 inches in diameter. Cook until sides round and bubbles form and flip.

Note: You can keep warm in 160°F oven while cooking additional pancakes or other breakfast 'fixins.
