“COCONUT PINEAPPLE SQUARES” IS IN:

COCONUT PINEAPPLE SQUARES 
1 tbsp. butter
1 tbsp. sugar
1 cup sifted all-purpose flour
3 tsp. baking powder
1/4 tsp. salt
3 eggs, well beaten & divided
1 (8 oz.) can crushed pineapple (drained)
1 cup sugar
1 tbsp. butter (melted)
2 cups moist shredded coconut flakes

Cream 1 tablespoon butter and 1 tablespoon sugar.

Sift flour, baking powder and salt together and add to creamed mixture and stir until crumbly.

Add half the beaten eggs and mix well.

Spread in greased 8-inch square pan and cover with drained pineapple.

Mix 1 cup sugar, melted butter and coconut flakes, add remaining eggs and blend well.

Spread over top of pineapple.

Bake in moderate oven (350°F) for 30 to 35 minutes. When cool cut in squares.

Makes 1 1/2 dozen small squares.
