POTATO SALAD | |
2 1/2 c. diced cooked potatoes 1/4 c. chopped parsley 1/2 c. plain lowfat yogurt 3/4 tsp. herb or Italian seasoning 1 hard-cooked egg, sliced 1/2 c. finely chopped onion 1/2 c. finely cut celery 1 tbsp. prepared mustard 1/2 tsp. paprika Combine the potatoes, onions, parsley and celery; then mix. In a small bowl, combine the yogurt, mustard and seasoning; add to vegetables; mix carefully. Cover and chill several hours to allow flavors to blend. When serving, garnish with slices of egg and paprika. |
