PUMPKIN BREAD - MUFFINS 
4 eggs, well beaten
3 c. sugar
1/2 tsp. baking powder
3 1/2 tsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
2/3 c. water
1 c. oil
3 1/2 c. flour
2 c. pumpkin or 1 (15 oz.) can pumpkin
1 c. chocolate chips, optional
1 c. raisins, optional
1 c. chopped nuts, optional

Pumpkin pie spice or 2 teaspoons ground cloves, 1 teaspoon cinnamon and 1 teaspoon nutmeg.

Mix ingredients in order, in a large bowl. Turn into four 9 x 14 inch loaf pans which have been greased well. Bake at 350 degrees for 1 hour or when a toothpick inserted in the center of the loaf comes out clean. The batter may also be poured into greased muffin tins and baked at 375 degrees for 10-20 minutes. This recipe freezes well.
