PUMPKIN BANANA BREAD | |
1 1/2 c. sugar 3/4 c. butter, softened 3 eggs 1 c. fresh pumpkin 2 med. ripe bananas, mashed 3 c. flour 2 tsp. baking soda 1/2 tsp. baking powder 1 tsp. pumpkin pie spice 1 c. chopped walnuts, raisins or chocolate chips or 1/2 c. and 1/2 c. (all optional) Preheat oven to 350 degrees. In large bowl, mix sugar, butter and eggs at medium speed. Scrape bowl often until mix is light and fluffy, 1 to 2 minutes. Add pumpkin and bananas. Beat until well mixed, 1-2 minutes. Mix will appear to be curdled. Add remaining ingredients (except nuts, chips, etc.), mix until moist. Stir in nuts, chips, desired addition. Grease two 8x4 inch loaf pans. Divide batter between 2 pans ad bake for 50-60 minutes. Test with wooden toothpick. Cool in pans for 5 minutes, remove and cool completely. Yield: 2 loaves. |
