RAISED DOUGHNUTS (MOM'S) 
1 cake yeast
1/2 c. lukewarm water
2 c. scalded milk
2 tsp. salt
1 c. sugar
8 tbsp. shortening
4 beaten eggs
1 tsp. vanilla

Place yeast in lukewarm water. Stir until dissolved. Add salt, sugar and shortening to scalded milk and cool until lukewarm. Add yeast mixture and enough flour to make a thick batter, beat until smooth. Let stand in warm place until light and full of bubbles.

Then add beaten eggs and vanilla and enough flour to make easily handled dough. Let rise and knead again. Place on floured board and roll 1/2 inch thick and cut doughnuts. Let doughnuts rise double. Deep fat fry and ice with sugar or glaze.
