PEARL'S RAISED DOUGHNUTS 
1 qt. lukewarm water
4 tbsp. yeast (4 pkgs.)
1 c. sugar
1 c. butter or good grade butter
1 tbsp. salt
4 beaten eggs
1 tbsp. vanilla
Flour to make a dough you can knead (12-15 c.)

Dissolve yeast in warm water. Add sugar, salt, beaten eggs, softened shortening and vanilla. Stir. Add about 7 to 8 cups flour; mix well. Add enough flour to handle easily. Let rise until doubled. Cut into doughnuts (I use a vegetable can and cut out the centers with the insert of a old doughnut cutter). Let rise about 1 hour. Fry in Crisco or other shortening. Dip into thin powdered sugar icing while still warm or shake in bag with sugar. Makes 3 to 4 dozen.
