AROMATIC APPLE PIE 
1-2 tbsp. lemon juice
1-2 tbsp. flour (if fruit is juicy)
2/3 - 3/4 c. sugar (or 1/2 granulated and 1/2 brown)
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/8 tsp. salt
1/2 tsp. grated lemon rind
6-7 c. thinly sliced, pared apples (2 lbs.)
1 tbsp. butter

Preheat oven to 425. Line pie plate with pastry.

Combine lemon juice with flour, sugar, nutmeg, cinnamon, salt and lemon rind (amount of sugar depends on tartness). Sprinkle half of mixture over apples. Add more apples then add remainder of mixture. Dot with butter in center.
