1 1/4 c. cooking oil
2 c. sugar
3 eggs
3 c. plain flour or cake flour
1 tsp. baking soda
1 tsp. salt
1 tsp. apple pie spice
1 c. pecans
3 c. raw apples, peeled & diced
2 tsp. vanilla

Mix sugar, eggs and cooking oil together. Then add other ingredients and mix. Bake in 9 x 13 inch pan at 325 degrees for 45 minutes.

GLAZE:

1 c. brown sugar
1/2 c. butter
1/4 c. evaporated milk
1 tsp. vanilla

Mix ingredients and cook over low heat until it comes to a full boil. Remove from heat, beat until cool and pour over cake.
