PARMESAN POTATOES 
1/4 c. butter
4 med. baking potatoes (about 1 3/4 lbs.), scrubbed but unpeeled
1/2 c. grated Parmesan cheese
1 tsp. white pepper

Preheat the oven to 375 degrees and melt the butter in a 10 x 1 3/4 inch baking dish. Cut potatoes in half lengthwise with the cut surfaces facing down. Slice each potato half lengthwise into 1/4 wide strips. Reserve the ends that are almost entirely covered with peel.

Layer the remaining potatoes in overlapping rows in the baking dish. Sprinkle each layer with the cheese and pepper. Top with the reserved potato ends, skin side up, the Parmesan and pepper. Bake uncovered in preheated oven until tender when tested with a fork and top layer is on crisp side, 40-50 minutes.
