ORANGE AND RED SALAD 
1 c. sliced almonds
1 tbsp. butter
2 tbsp. lemon juice
1 tsp. Dijon mustard
1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. vegetable oil
1 head romaine lettuce, torn in pieces
1 (11 oz.) can mandarin oranges, drained
1 sm. red onion, thinly sliced

Saute almonds in butter until golden, reserve. Combine lemon juice, mustard, sugar, salt and pepper. Beat in oil. Combine lettuce, oranges, onion and almonds. Toss with dressing. Makes 4 to 6 servings.
