FRYING PAN COOKIES 
1 1/2 c. chopped dates
1/4 c. butter
1 c. sugar
2 eggs, beaten
1 cap full of vanilla
3 c. Rice Krispies
1/2 c. walnuts, chopped fine
1 bag coconut

Mix dates, butter, sugar and eggs in frying pan. Cook 10 minutes or until dates are soft. Cool some, then add vanilla, Rice Krispies and walnuts.

Butter your hand well, roll mixture into balls then roll balls in coconut. Tip for the holidays-add a few drops of food coloring to the coconut for a festive touch!

You can make these without using any butter. Just keep a low heat and stir constantly. You can also omit the walnuts. My mom use to make these when I was growing up. They are healthy and good for you. Enjoy!

My mom used to make this recipe every Christmas, only she didn't add the 1/4 cup of butter.
I've come up with a healthy version... make date paste the same (you can cut back on the sugar and use brown sugar instead of white) but add chopped roasted cashews and hempseed instead of the Rice Krispies. You can also add cinnamon instead of or with, the vanilla.
