PAN FRIED BLUEGILL 
2 lbs. dressed (and fillet bluegill) fish
1 1/2 tsp. salt
Dash pepper
1/4 c. milk
1/2 c. flour
1/4 c. cornmeal
Vegetable oil for frying

Clean fresh caught fish and fillet. You may use frozen. Rinse and dry fish. Add salt and pepper to milk. Mix flour and cornmeal. Dip fish fillets into milk mix and roll in flour mixture. Fry in hot oil at moderate heat for 4 to 5 minutes or until golden brown on one side.

Turn carefully and fry 4 to 5 minutes longer - or until other side is golden brown and fish flakes easily when tested with a fork. Drain on paper.

4 to 5 minutes is waaaaay too long for bluegills...even big ones. Closer to 3 minutes on the first side and 2 on the second.

And, try very finely crushed (rolled in a ziplock back under a rolling pin) Ritz Crackers (not Townhouse).

expense fish...flesh side down....no more than three min. and 2 on other side....mid heat...high take a minute off each. serve with lots of lemon juice....
