RITZ APPLE SLICES (MOCK APPLE
SLICES)
 
6 c. water
3 c. sugar
2 heaping tsp. cream of tartar

Bring to boil 2 minutes. Add 72 Ritz crackers. Boil 2 more minutes. DO NOT STIR. Let cool.

CRUST:

4 c. flour
1 1/2 tsp. salt
1 tsp. baking powder
1 1/2 c. shortening
2 eggs
1 tsp. lemon juice
1/3 c. milk

Sift together flour, salt, and baking powder. Cut in shortening. Beat eggs and add lemon juice, then milk. Add to above ingredients and roll out for 11x16 inch or 12x15 inch pan.

Pour in filling, sprinkle with cinnamon and dot with butter. Cover with top crust and bake 30 to 40 minutes at 400 degrees. Cool and frost with poured confectioners' icing.
