RITZ - CARLTON BLUEBERRY MUFFINS 
3 1/2 c. sifted all-purpose flour
2 tbsp. baking powder
3/4 c. granulated sugar
Pinch of salt, optional
5 eggs, slightly beaten
1/2 c. milk
5 oz. butter, melted (1/2 c. plus 2 tbsp.)
4-5 c. blueberries, fresh or frozen
Sugar for topping

Heat oven to 425 degrees. Mix flour, baking powder, sugar and salt. Stir in eggs, milk and butter. Do not overmix. Carefully stir in blueberries. Grease the top flat surface of a large muffin tins. Insert paper cups and spoon batter to the top of the paper cups. Sprinkle generously with sugar. Reduce heat to 400 degrees; place muffin tins on middle shelf of oven and bake about 25 minutes, until muffins are golden brown. Remove from tins and cool.

My husband has diabetes so this recipe was perfect for him. I halved the recipe and used 2 eggs instead. I also used less blueberries. With half the recipe, I used a large six portion muffin tin. You can mix Splenda in with the sugar if you want to cut down on sugar.
