RECIPE COLLECTION
“SQUASH CASSEROLE” IS IN:

SQUASH CASSEROLE 
3 cups squash cooked
1 medium onion
1/2 cup (1 stick) butter
1/2 bag stuffing mix
1 can cream of chicken soup
1 (2 oz.) jar pimentos
1 (8 oz.) container dairy sour cream
salt and pepper, to taste

Cook squash and onion together until tender. Drain. Mix them with some of the stuffing mix and then with the remaining ingredients.

Put in a casserole dish and top with remaining stuffing.

Bake at 350°F for 35 to 40 minutes.

I made this for a work function. EVERYBODY RAVED ABOUT IT. I gave it 4 stars because I think it could have used more stuffing mix. Next time, I'll use the whole box. Also, I would specifically recommend the cornbread stuffing mix.

The recipe says 1/2 a bag not 1/2 a box of stuffing mix. Boxes of Stovetop have much less than a bag of say, Pepperidge Farm which I'm sure is what this recipe is meant to use. Of course it isn't stated but a bag and a box are very different in size.

I wanted to enhance the nutrition of this dish while reducing the use of processed food so I made some changes. First, I don't have canned soup of any kind in my pantry so I used some homemade chicken stock and added sage, rosemary, thyme and parsley to it. I simmered that awhile then thickened it with flour. I cooked the onions and squash in butter (butter homemade from Jersey cow cream!) I don't have any bags of stuffing mix around either so I toasted until dry some slices of homemade honey/oat bread and crumbled them when they cooled. I liked the sound of adding bacon and cheese to this dish so I use some pancetta which I fried crisp and added to the thickened chicken "soup" mixture. I also had some homemade farmer cheese on hand so when I assembled the dish I crumbled some over the cooked squash/onions before spreading with the above mixture plus sour cream.

This is a great way to use all that extra summer squash that's in the garden or accumlates in the freezer as well as increasing the healthy fat in the diet.

I left out the Pimentos (that sounded odd), and added Cream of mushroom soup and Parm. Cheese to the Mixture. Yummy !!
