CROCKERY POT CORNED BEEF AND
CABBAGE
 
8 small red skinned potatoes, quartered
1 corned beef brisket, 3 lb.
8 whole black peppercorns
2 bay leaves
1 onion, cut into wedges
1 head cabbage, cored and cut into 8 wedges

In a 6 quart Crockery Pot, place the potatoes on the bottom.

Top with the corned beef, including any juices in the package.

Scatter on the onions, peppercorns and bay leaves. Add water to cover.

Cover and cook on low 6 hours.

Add the cabbage wedges and continue cooking until meat is cooked and vegetables are tender (an additional 2 - 3 hours).

Slice the meat and serve with the vegetables, drizzling some of the juices over all.

Serves 6

I wash my corned beef, cut off most of the fat, place in oblong shaped crock pot. I mix water and dry Campbell's onion soup mix and pour over beef and cook on high until done. About 1/2 hr before I feel it's almost done. I may add more onions but cook my potatoes separately if I do not have room in crock pot. So easy and gives it a good flavor.

This was a wonderful recipe! I used the seasoning packet that came with the corned beef and the juices from the packet. Because its just two of us, next time I'll use fewer potatoes. And put the cabbage in later to the dish being ready to serve. It turned to mush, but still had great flavor. We had sandwiches the next night with coleslaw. It was like eating my grandmother's corned beef! Sliced well but was still tender. This recipe is a keeper.

I agree with Leslie. Great taste but next time I will use fewer potatoes and add the cabbage closer to serving time.

Perfect! Easy, no fuss. I used beer instead of water to cover the roast. It came out tender and tasty. Maybe a little too salty but more potatoes would have taken care of that.
