BASIC NUT BREAD 
Muffins and Loaf Breads:

Never beat muffin batter; mix it only until dry ingredients and liquid are blended. The mixture may look rough and lumpy, but baking will fix that. Grease muffin tins only on the bottom - not on the sides. Batter will then cling to the sides while baking, and better volume will result.

3 cups all-purpose flour
6 tsp. baking powder
1 1/4 tsp. salt
1/3 cup sugar
1/3 cup shortening, melted
1 egg
1 1/2 cups milk
1/2 cup chopped nuts

Preheat oven to 350°F

Sift flour, measure, add baking powder and salt. Sift again, mix sugar, melted shortening and egg, add dry ingredients alternately with milk. Add nuts. Pour into greased loaf pan.

Bake at 350°F for 1 hour.

Variation:

Dates, maraschino cherries may be added.
