Muffins and Loaf Breads: Never beat muffin batter; mix it only until dry ingredients and liquid are blended. The mixture may look rough and lumpy, but baking will fix that. Grease muffin tins only on the bottom - not on the sides. Batter will then cling to the sides while baking, and better volume will result. 1 cup milk 3 cups white flour 2 tbsps. shortening 1 egg 4 tsps. baking powder 1/2 cup sugar 1/2 tsp. salt Grind orange peel. Simmer in water for 15 minutes. Drain. Sift together flour, baking powder, salt. Work in shortening. Add drained orange peel, nuts. Beat slightly and add egg, sugar, and milk. Pour into greased loaf pan. Bake. Variation: 1/2 cup ground orange peel. Time, Temp and Yield: 1 hour; 350°F; 1-2 lb. loaf |
