BROCCOLI CASSEROLE 
2 pkg. frozen broccoli spears (I prefer florets)
1 c. mayonnaise
1 can condensed cream of mushroom soup
1 lg. onion, chopped finely
2 eggs
2 c. shredded cheddar cheese, mild or sharp
1 pkg. Townhouse crackers
1 stick butter, melted

Cook broccoli as directed. Mix mayonnaise, soup, onion, and eggs. In a greased 2 quart baking dish, layer broccoli, mayonnaise mixture, and cheese. Crush crackers and sprinkle crumbs on top. Pour melted butter over top.

Bake 1 hour at 350 degrees. Cooking time may vary according to oven, so when crackers are toasted to your satisfaction, you may shut off oven and leave casserole in until the hour is up.
