BROCCOLI CASSEROLE 
12 to 18 crackers, crushed (Townhouse or Ritz)
2 pkgs. frozen chopped broccoli
1 can cream of chicken soup or cream of mushroom
1/2 c. chopped onions
1/2 c. chopped celery
2 tbsp. butter
6 slices of cheese (American or Velveeta)
1/2 stick butter

Preheat oven to 350 degrees. Saute onions and celery in 2 tablespoons butter. Warm soup, add onions and celery. Add 3 slices of cheese. Cook until cheese is melted. Cook broccoli (5 to 8 minutes) as package says. Drain excess water. Add broccoli to soup mixture. Set aside.

Melt 1/2 stick butter. Add crushed crackers. Mix together. Take 2/3 of mixture and put into buttered casserole dish. Press gently. Pour half of broccoli mixture into crackers. Take remaining cheese slices, put over broccoli mixture. Pour on remaining broccoli mixture. Top with remaining crushed crackers. Bake for 20 minutes at 350 degrees.
