MINI CHEESE CAKES 
1 1/2 lbs. cream cheese (3-8 oz. pkgs.)
2/3 c. sugar
3 eggs
1 tsp. vanilla
1 box vanilla wafers
1 jar fruit topping (cherry or blueberry)
Sm. foil muffin cups

Place 1 vanilla wafer into each muffin cup.

Mix first 4 ingredient and fill muffin cups approximately 1/2 - 3/4 full. Bake at 350 degree oven for 15 minutes. Remove from oven and top with fruit topping.
