MINI CHEESE CAKES 
1 lb. cream cheese (16 oz.)
3/4 c. sugar
2 eggs
1 tsp. vanilla
24 vanilla wafers
Cherry pie filling

With hand mixer, beat cream cheese, sugar, eggs, vanilla until smooth. Put cup cakes liner in cup cake pan. Put a vanilla wafer in each; flat side down. Put 1 tablespoon of cream cheese mixture into each. Bake 15 minutes at 375 degrees, do not over bake. Cool cakes and top with teaspoon of filling. Keep refrigerated until ready to serve. Makes 24 cheese cakes.
