PARMESAN WALLEYE 
2 lb. fish
2 tbsp. lemon juice
1/2 c. Parmesan cheese
4 tbsp. butter
3 tbsp. mayonnaise
1/4 tsp. salt
dash of Tabasco
pepper to taste
3 tbsp. chopped green onions

Place filets in a buttered dish in a single layer. Brush with lemon juice and let stand for 10 minutes. Mix all other ingredients in a small bowl. Broil filets 3 to 4-inches from the burner for 5 minutes and then turn. Spread remaining mixture on top and broil for another 3 to 4 minutes. Watch Parmesan cheese carefully to avoid burning. Note: Broil thinner filets closer to 3 minutes.
