MINI CHEESE CAKES 
18 vanilla wafers
16 oz. cream cheese
1/2 c. sugar
2 eggs
2 tsp. vanilla
1 can cherry pie filling (optional)

Mix cream cheese, sugar, eggs and vanilla in a bowl. Beat 5 minutes. Place a wafer in the bottom of each paper muffin cup. Fill to 1/4 inch from top with the cheese mixture.

Bake at 375 degrees for 15 minutes. Chill. Top with pie filling (optional).
