BACON AND EGG CASSEROLE 
10-12 slices bacon
1/2 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 1/4 c. milk
1 c. shredded cheddar cheese
6 hard boiled eggs
3/4 c. crushed potato chips

Fry bacon until crisp; set aside. Cook onion in butter until tender, but not browned. Blend in flour, add milk. Cook over medium heat, stirring until thickened. Add cheese and stir until melted. Slice the boiled eggs. Place half of the eggs in 10 x 6 x 1 1/2 inch baking dish. Cover eggs with half of cheese sauce. Add a layer of 3/4 cup crushed potato chips. Then a layer of crushed bacon, 5-6 pieces. Repeat layers. Bake 30 minutes at 350 degrees.
