AU GRATIN POTATOES 
1 tbsp. butter
1 tbsp. flour
1 c. milk
1 sm. pkg. Velveeta cheese
6 med. potatoes (sliced thinly)
Grated cheese (if desired)

Melt butter in saucepan. Remove from heat. Gradually add 1 tablespoon flour, blending until smooth. Put back on medium heat and gradually add 1 cup milk. Cook until smooth and gradually add 1 package sliced Velveeta cheese. Bring to boil and add sliced potatoes and bring to second boil, mixing well.

Pour into greased casserole. Dot with butter, salt and pepper and sprinkle with grated cheese if desired. Cook covered in preheated 375 degree oven for 40 minutes. Remove cover and cook at 475 degrees until lightly browned on top.
