AU GRATIN POTATOES 
3 tbsp. butter
3 tbsp. all-purpose flour
1 1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. (4 oz.) shredded Cheddar cheese
5 c. thinly sliced, peeled potatoes (about 6 medium)
1/2 c. chopped onion

In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Add potatoes and onion; stir well. Transfer to a greased 2-quart baking dish. Cover and bake at 350°F for 1 hour. Uncover; bake 30 to 40 minutes longer or until the potatoes are tender.

Yield: 6 to 8 servings.
