GERMAN SAUSAGE AND POTATOES AU
GRATIN
 
1 lb. German sausage
1/2 c. milk
1/4 c. chopped green bell pepper
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. butter
1 can mushroom soup
1/2 c. chopped onion
1 tbsp. pimento
5 c. sliced potatoes
1/2 c. grated Cheddar cheese

Combine soup, milk, onions, green pepper, pimento, salt and pepper. Blend well. Place 1/2 of potatoes in 2 quart casserole. Add 1/2 of sausage, sliced. Cover with 1/2 of soup mixture. Repeat a second layer. Spot with butter. Cover and bake at 350 for 1 hour 15 minutes. Remove cover, add cheese and return to oven. Bake uncovered 10 minutes longer.

This was pretty good - it lasted me for three days. I had a big "beef German sausage", all in one link, from a local producer, and found this recipe to use it in. I tried to make it exactly as written. I didn't know if I should use "Cream of Mushroom" soup or "Golden Mushroom", but opted for the former. And I'm never sure how to measure amounts like "5 c. slices potatoes", by weight or volume, so I used 3 medium/large russets. I think that was a little bit too much - at least, I though the final results had a bit too much potato. Overall it made a decent, comfort food-y dish - nothing fancy, but worth the effort.
