RUTH'S HAMBURGER BUNS
7 c. flour
2 pkgs. yeast
2 c. warm water
3/4 c. cooking oil
1/2 c. sugar
2 tsp. salt
3 eggs

Combine warm water with yeast and sugar. Let stand 5 minutes.

In mixing bowl with 4 cups flour, add yeast mixture, oil and salt. Add eggs, beat 3 minutes on high. By hand, stir in rest of flour to make soft dough. Turn out on floured surface. Knead until smooth. Place in greased bowl. Cover, let rise until double.

Punch down, divide into three portions. Let rest 5 minutes. Divide each portion of dough in 8 balls. Press ball flat. Place on baking sheet. Press to 3 1/2 inch circles. Let rise until double. Bake in 375 degree oven 10 minutes. Brush tops with melted butter. Remove from baking sheet. Cool. Cut in half like a hamburger bun. These freeze well.

I absolutely LOVE this recipie! I substitute "Veginaise" for the eggs and use "cake flour" instead of regular, but I've never found a better recipie for soft and delicious bread like this one! The buns remind me of the old fashioned ones we used to have back in the '60's. Toasted with butter, they are wonderful! Congrats to Ruth!

Great recipe! After dividing into three portions, I wrap two of the portions in plastic wrap and freeze them. I pull out a portion the night before I need them and put them in the refrigerator. Divide into eight balls and let them rise and bake.
