BROCCOLI AND POTATO AU GRATIN 
1/2 bunch fresh broccoli or 1 pkg. frozen broccoli
2 med. potatoes
1/2 c. milk
1/2 c. Cheddar cheese, grated
Dash paprika

Preheat oven to 350 degrees. Steam broccoli until tender. Peel potatoes and boil until tender. Puree potatoes in a food processor, slowly adding milk (or mash them with a potato masher and beat in milk). Place broccoli in an ovenproof casserole or pie plate.

Pour pureed potatoes over broccoli. Spread grated Cheddar cheese over potatoes and bake in preheated oven about 15 minutes, until cheese is brown and bubbly. Sprinkle on a dash of paprika.

VARIATION:

Substitute cauliflower, sliced tomatoes, or asparagus for broccoli

Substitute 1 cup Basic White Sauce for potatoes.

Substitute water for milk.

Substitute any kind of cheese, bread crumbs or ground nuts for Cheddar cheese.
